In honor of some of our great defense wins lately, I am sharing my cheesecake recipe.
Oreo Cheesecake (Otherwise known as Chocolate Vanilla Swirl)
(Sorry, ingredient measurements are in American measures, not the more logical metric ones)
Ingredients:20 or so Oreo cookies, crushed. Crush filling and cookie together. Sometimes I use more than 20
3 Tbsp butter
4 pkg Cream Cheese (softened)
1 cup sugar
1 tsp vanilla
1 cup sour cream
4 eggs
6 squares semi-sweet Baker's Chocolate
DirectionsPreheat oven to 325F.
1. Mix the crushed cookie crumbs and butter. I like to crush the cookies with the butter in a Kitchen Aid mixer.
2. Place mixture in bottom of a 13*9 inch pan (a glass one works well)
3. Bake the cookie crust for 10 minutes.
4. Mix cream cheese, sugar, and vanilla with electric mixer until well blended.
5. Add sour cream, mix well.
6. Add eggs one at a time mixing on low speed until just blended.
7. Remove 1 cup of the batter and set aside (this is the vanilla swirl part)
8. Melt the chocolate and mix it into the remaining batter and pour this over the oreo crust
9 Put spoonfulls of the batter that was set aside onto the top of the chocolate batter. Swirl it into the chocolate with a knife for a swirly effect.
10. Bake the whole thing for 40 minutes at 325F.
11. Cool for 4 hours, or better, let it sit in the fridge overnight.
Enjoy! (Makes about 16 servings - about 20 minutes of prep and 40 mins of baking)
